Broccoli Soup

1 1/2 cups chopped Broccoli (or 10-ounce pkg. frozen broccoli) 30 cal 3.3 protein
1/4 cup diced Celery 3.5 cal 0.18 protein
1/4 cup chopped Onion 16.75 cal 0.38 protein
1 cup Low-Sodium Chicken Broth 38 cal 4.8 protein
2 cups Skim Milk 182 cal 17.4 protein
2 tbls Cornstarch 122 cal 0.06 protein
1/4 tsp Salt 0 cal 0 protein
Dash Pepper 0 cal 0 protein
Dash Ground Thyme 0 cal 0 protein
1/4 cup grated Swiss Cheese 48 cal 7.7 protein

1) Place vegetables and broth in saucepan.
2) Bring to boil, reduce heat, cover, and cook until vegetables are tender (about 8 minutes).
3) Mix milk, cornstarch, salt, pepper, and thyme; add to cooked vegetables.
4) Cook, stirring constantly, until soup is lightly thickened and mixture just begins to boil. 5. Remove from heat. Add cheese and stir until melted.
