2 tsp. Extra Light Virgin Olive Oil 83 cal 0 protein
1 small Clove Garlic 8 cal 0 protein
1/2 cup sliced Mushrooms 7.5 cal 1.1 protein
1/2 cup sliced Zucchini 10 cal 0.75 protein

1) In a 9 inch skillet over medium heat, heat oil, adding scallions and garlic. Saute until softened.
2) Add mushrooms, zucchini, red pepper, and saute until pepper is tender (about 5 minutes).
3) Add rice, soy sauce, and pepper. Stir. Cook until mixture is heated through, stirring frequently.
